Chicken Brie & Pear Sandwiches

Mmmmm melty brie and smoky chicken goodness.  These sandwiches are just heavenly!  You can certainly cook your own chicken instead of using a rotisserie chicken, but personally I love the flavor of the rotisserie chicken.  A hearty, crusty bread really makes the difference in this sandwich as well.

  • Rotisserie Chicken
  • Bread
  • 1 Red Onion
  • Balsamic (2-3 T)
  • 1 T Butter
  • 1 t Sugar
  • Brie triangle
  • 1 Pear
  • Mayo
  • Apricot Jam
  • Lettuce

Chop 1 red onion.  Melt butter in sauce pan, add onion, and cook for about 5 minutes on medium heat.  Add balsamic vinegar and sugar, reduce heat to low/med and cook for about 15 minutes more.  Toast bread, spread mayo on one piece and apricot jam on the other.  Layer chicken on mayo, add sliced brie on top of chicken, layer balsamic onions on top of brie, sliced pear on top of brie, and lettuce on top of pear.  Top with second pieace of bread (w/ apricot jam).
