Mini garlic parmesan toasts

There’s nothing like a big pot of hearty soup to serve a crowd; especially this time of year!  But what to serve with it?

Enter – mini garlic parmesan toasts.  These are scrumptious dipped into soup, served on top of soup (ala croutons), served with a herbed goat cheese or dip of some sort, or just eaten all alone!  And the possibilities for what to top these toasts with must be endless!  All you need is a fresh baguette (sliced into 1/2 inch thick slices), and topped with whatever your little heart desires.

This time around, I brushed them with olive oil, sprinkled with grated parmesan, topped with a healthy dose of minced fresh garlic (I love garlic!), and finally some fresh chopped basil. Toss in the oven (at about 450 degrees) for 15 or so minutes (or until brown and toasty).

Watch them disappear.

P.S. – store these in an airtight container and they are great the next day … or the day after that … and I love them on top of my leftover soup!
